A Photo A Day [Day 163]


Another self-portrait. After reading up on the subject a bit I think I'm already improving. Why, all of me is actually in focus here as opposed to just a choice selection as in yesterday's pic. I've also successfully managed to blur out most of my messy house in the background. Expect to see more self-portraits now that I have a tripod to help me out. Good thing I'm vain enough to keep working at this until I get it right.

Stuffed Pizza Rolls


Yeah, I know I'm a couple of days late with this fun Super Bowl party recipe. But who's to say that unhealthy morsels of cheese-filled goodness have to be shared with a crowd? Since I couldn't care less about football and don't have enough local friends to throw a party for any occasion I made these chicken- and bacon-stuffed pizza rolls for dinner on Saturday, all for my husband and me. Kind of a throwback to my family's tradition of hunkering down with some Geno's pizza rolls and watching Star Trek: The Next Generation on Saturday nights while growing up. Except that these are 1,000 times better than anything you'd find in the freezer section.


I cheated and used refrigerated pizza crust, whipped up some shredded chicken earlier in the day, and tossed in crispy bacon, a few pieces of chopped onion, and some cilantro. Since I didn't cut my dough perfectly evenly I had a little trouble wrapping some squares around all of the filling but I somehow made it work. The dough puffs up nicely when baking so I had minimal loss of toppings.

The best part is there are no rules when making these so you can fill them with whatever pizza toppings you have on hand. I'm sure I'll be making these again with homemade dough as an easy weekend meal, assuming I've stuck to my diet earlier in the week so I can justify eating a bunch of carbs and cheese.

Stuffed Pizza Rolls
Recipe from The Farm Girl Recipes

1 roll refrigerated pizza dough, (or make your own)
1 teaspoon Hidden Valley Ranch Dressing mix
1 1/2 tablespoons grated Parmesan cheese
1 tablespoon melted butter
Mozzarella cheese, cubed (or use a combo of mozzarella and cheddar)
5 slices bacon, cooked and crumbled
1 cup shredded, cooked chicken
*or any other ingredients for your favorite pizza (pepperoni, pineapple, ham, peppers, sausage, onions, etc.)


1. Take 1 teaspoon of ranch dressing mix and combine it with 1 1/2 tablespoons Parmesan cheese. Set aside.

2. Preheat oven to heat specified on pizza dough package. If you are making your own, 425 degrees.

3. Unroll your pizza dough onto a lightly floured surface. Pat or roll the dough so it's about 12" by 8". Using a pizza cutter, slice dough into 24 squares. Place cheese and desired toppings on each square.

4. When all of your dough squares have cheese and toppings on them, carefully lift up each square and wrap the dough around the toppings. Grab the four corners first and then squeeze the seams shut. Then place them seam side down in a lightly sprayed pie pan (or similar sized dish). Brush with melted butter sprinkle with the Parmesan-ranch mixture.

5. Place rolls in the oven. The baking time really depends on the type of dough you're using. Whether it's different brands from the store, or homemade dough, they all take different amounts of time. Set your timer for 10 minutes and check on them after that. They may take up to 15 or 20 to be done. Take them out when they're lightly golden on top. Serve them warm with a side of pizza sauce for dipping.

Rolled Ribbon Flower Headband


I have an aversion to homemade goods that actually look homemade, which is why I haven't jumped on the rolled or singed flower bandwagon until now. But when I saw Alisa Burke's version fashioned into a headband I began to see the possibilities. What girl couldn't use a new headband, after all?


I like that her version is simple and features a little sparkle from the beads in the center. As with everything she creates, she makes it look so easy to recreate. And, for the most part, it is. I did wind up twisting my ribbon a little more tightly than she did because I had a hard time getting it to wrap properly otherwise.

As a result, I'm not sure if I'm all that thrilled with my new headband. It looks a little too homemade to my excessively picky eye. At least I got some practice taking self-portraits while trying to model it.

Peanut Butter Nutella Brownies

Happy World Nutella Day! Oddly, I made these brownies last night completely unaware that today was the big day of celebration for one of my favorite foods. Honestly, had I known I would have tried to come up with something more intricate and impressive. Which isn't to say these Nutella brownies aren't deliciously infused with lots of Nutella flavor and worth the loss of nearly an entire jar of the stuff. The chocolate in the recipe comes entirely from the Nutella and when combined with oodles of butter and brown sugar the brownies are fudgy and flavorful. Add in some peanut butter chips for the win!

Nutella Brownies
Recipe from Sweet Bliss

1/2 cup flour
1/4 tsp salt
2 eggs
1 cup Nutella
1/2 cup brown sugar
1 tsp vanilla
1 stick unsalted butter, melted and brought to room temp
3/4 cup peanut butter chips

1) Preheat your oven to 325 F. Prepare a 9 inch square pan by lightly greasing bottom and sides or lining it with parchment paper and spraying it with non stick spray.
2) In a small bowl, sift flour and salt together. Set aside.
3) In another bowl, mix Nutella, eggs, brown sugar and vanilla on low speed until well incorporated and creamy, about 2 minutes or so. Add flour mixture in 2 batches, alternating with the melted butter. Fold in peanut butter chips.
4) Spread in your pan and bake for 25-35 minutes. You want the center to be just set if you like them fudgy.
